Homemade recipe to make Spicy Masala Bombay Biryani

Ingredients for Masala Bombay Biryani

For making Biryani Masala

  • Cumin seeds, one tbsp
  • Cinnamon sticks, two
  • Black cardamom, three to four
  • Black peppercorns, ½ tsp
  • Green cardamom 3-4
  • Cloves ½ tsp
  • Nutmeg, ½ inch piece
  • Star anise, 1
  • Caraway seeds, ½ tsp
  • Mace, ½ tsp
  • Salt 1 & ½ tsp
  • Cloves 3-4
  • Black cardamom 1
  • Black pepper corns, 6-8
  • Cumin seeds ½ tsp
  • Dried plums, 4-5
  • Turmeric powder 2 tsp
  • Cinnamon stick 1-2
  • Green cardamom 2
  • Bay leaf 1
  • Red chili powder 1 tbsp

Green chili paste:

  • Green chilies 12-15
  • Water as required Rice:
  • Water as required
  • Whole spice 1 tbsp
  • Salt 2 tbsp
  • Mint leaves 20-25
  • Basmati rice soaked ½ kg

For making Gravy

  • Ghee ½ cup
  • Chicken ½ kg
  • Ginger garlic paste 1 tbsp
  • Green chili paste 2 tbsp or as required
  • Yogurt 4 tbsp
  • Water 1 & ½ cup


  • Onion Fried 1 cup
  • Tomatoes Sliced 2
  • Mint leaves handful
  • Green coriander handful
  • Green chili 3-4
  • Yogurt 1 cup
  • Food color 2-3 pinch
  • Rice Boiled
  • Onion Fried
  • Potatoes Boiled with salt

Homemade recipe to make Spicy Masala Bombay Biryani


  1. In the first step, spice mill, add cumin seeds, cinnamon stick, black cardamom, black pepper corns, green cardamom, cloves, nutmeg, star anise, black cumin and mace, grind to make a coarse powder.
  2. Then, in blender powder, add salt, cloves, black cardamom, black pepper corns, cumin seeds, dried plums, turmeric powder, cinnamon stick, green cardamom, bay leaf, red chili powder and mix well. Biryani masala is ready and set aside.
  3. After that, for making Green chili paste, add green chilies and water in the grinder, grind and set aside.
  4. Now, take a pot, add water, bring it to boil and add whole spice, salt, mint leaves.
  5. Then, add basmati rice, mix it and boil until 3/4th rice is done, strain and set them aside.
  6. Later, in the pot, add ghee, let it melt then, add chicken and cook until color changes.
  7. Now, add ginger garlic paste and sauté them for some time.
  8. Now, add green chili paste, mix and fry for 1-2 minutes.
  9. Then, add Biryani masala and yogurt, mix well until oil separates, add water and bring it to boil.
  10. Cover and cook until ½ cup gravy remains.
  11. In gravy, add fried onion, tomato, mint leaves, green coriander, green chili, yogurt, food color, boiled rice, food color, fried onion, mint, green coriander, potatoes, cover and cook on low flame for 10-12 minutes.

Delicious Masala Bombay Biryani is ready to serve now.
